|Gluten Free Mixed Berry Muffins|

Consistency is key with a little moderation. I'm a sweets kinda gal. I haven't always been but since becoming a mama I have learnt how to bake and have come to like the occasional 'sweet thang' with my coffee or tea. I tried to cut all sweets out in the first 3 weeks which only saw me go all Miss Piggy on myself in the fourth week, resulting in a slight gain.
How do I rectify this?
I'm now baking low fat versions of heavenly slices and muffins! These babies have all been portioned to the max with their price in calories clearly marked on individual snap locked bags. So the next time I feel my Miss Piggy personality popping to the surface I'll be able to quickly shove a low fat Mixed Berry Muffin into her mouth and she will be SAT-IS-FIED!
