This Lentil Soup was one of the tastiest vegan soups I have had in a while and all cooked in a matter of 3 hours in my slow cooker. Just add some crusty Italian Bread and you're in heaven... Yes ladies and gentlemen, being Vegan isn't actually all that bad. Since many of these slow cooker and vegan recipes are new to Sunny, I'm having her help in the kitchen so that she can see what it is that's going into her meals and I found that by doing this she's actually eating them more!
For those of you who are acquainted to my little space here then you may be aware that Sunny and I are currently doing Lent in the lead up to Orthodox Easter. No meat (Sunny's not keen on meat to begin with), dairy (Sunny still has dairy), eggs or fish (I still feed Sunny fish). So to be sure that we are filling our tummies and nourishing our bodies, I'm determined to be creative in substituting much needed nutrients, vitamins and minerals. We have so much available to us in supermarkets these days, why not taste experience and taste a different kind of eating.

ReplyDeleteI have some red lentils that need to be used up and are destined for this! I think parsnip would be good instead of potatoes. I just love my slow cooker so much! Thanks for the inspiration! :)
ReplyDeleteSuch comfort food isn't it? I love lentils, and always make big batches of soups and stews for freezer. I wish I had room on my bench top for a slow cooker though! Would love to just pop everything in and walk away :)
